Mash Recipies


Bubble and Squeak

This is fantastic way to use your leftover mashed potatoes. I remember as a child having bubble and squeak for breakfast – particularly if my Mother had made too much mash the night prior. What a great way to start the day!


Ingredients:
2 cups of leftover potatoes mash
2 cups of shredded cabbage, boiled
1 tablespoon of butter
1 Medium sized onion.

Method:

    1. Finely chop the onion and in a large pan, fry the onion over a low heat, until it softens up.
    2. Add boiled cabbage and stir continuously until mixed through.
    3. Fold in the leftover mashed potatoes.
    4. Add salt and pepper as required
    5. Take this mixture and press into a large pancake shape with a spoon.
    7. Cook for a further 5 minutes, till lightly browned, then turn and brown the other side.
